Cheese Scones

Ingredients List

    • 225g self-raising flour
    • ½ tsp salt
    • ½ tsp mustard powder (optional, for extra flavour)
    • 50g butter (cold, cubed)
    • 100g mature cheddar cheese (grated)
    • 150ml milk
    • 1 tsp baking powder

Instructions

    1. Preheat your oven to 200°C (180°C fan) or Gas Mark 6. Line a baking tray with parchment paper.
    2. In a large bowl, mix the flour, salt, mustard powder (if using), and baking powder.
    3. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.
    4. Stir in most of the grated cheese, keeping a little aside for topping.
    5. Gradually add the milk, mixing with a knife until it forms a soft dough.
    6. Turn the dough onto a floured surface and gently knead it a few times.
    7. Roll or press it out to about 2cm thick.
    8. Cut out rounds using a floured cutter or shape by hand. Place them on the baking tray.
    9. Sprinkle the remaining cheese on top.
    10. Bake for 12–15 minutes until golden brown and well-risen.
    11. Cool on a wire rack and enjoy warm with butter!
