
Ingredients List
- 225g self-raising flour

- ½ tsp salt

- ½ tsp mustard powder (optional, for extra flavour)

- 50g butter (cold, cubed)

- 100g mature cheddar cheese (grated)

- 150ml milk

- 1 tsp baking powder
Instructions
- Preheat your oven to 200°C (180°C fan) or Gas Mark 6. Line a baking tray with parchment paper.
- In a large bowl, mix the flour, salt, mustard powder (if using), and baking powder.
- Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.
- Stir in most of the grated cheese, keeping a little aside for topping.
- Gradually add the milk, mixing with a knife until it forms a soft dough.
- Turn the dough onto a floured surface and gently knead it a few times.
- Roll or press it out to about 2cm thick.
- Cut out rounds using a floured cutter or shape by hand. Place them on the baking tray.
- Sprinkle the remaining cheese on top.
- Bake for 12–15 minutes until golden brown and well-risen.
- Cool on a wire rack and enjoy warm with butter!
