Classic Victoria Sponge Cake

Ingredients List

  • 200g self-raising flour
  • 200g caster sugar
  • 200g unsalted butter (softened)
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1 tsp baking powder
  • 100g strawberry jam
  • 150ml double cream (whipped)
  • Icing sugar (for dusting)
  • Instructions

    1. Preheat oven to 180°C (160°C fan) and grease two 20cm cake tins.
    2. Cream butter and sugar until pale and fluffy.
    3. Add eggs one at a time, beating well, then mix in vanilla.
    4. Fold in flour and baking powder, adding milk if needed.
    5. Divide into tins and bake for 20-25 minutes.
    6. Cool, then sandwich with jam and cream. Dust with icing sugar.
