Classic Victoria Sponge Cake

Instructions
- Preheat oven to 180°C (160°C fan) and grease two 20cm cake tins.
- Cream butter and sugar until pale and fluffy.
- Add eggs one at a time, beating well, then mix in vanilla.
- Fold in flour and baking powder, adding milk if needed.
- Divide into tins and bake for 20-25 minutes.
- Cool, then sandwich with jam and cream. Dust with icing sugar.
