Peach Melba Tart

Ingredients List

  • 1 sheet puff pastry
  • 3 peaches, peeled and sliced
  • 100g raspberry coulis
  • 200ml double cream
  • 1 tbsp icing sugar

Instructions

  1. Preheat oven to 200C (390F).
  2. Roll out puff pastry and line a tart tin. Bake for 15 minutes until golden.
  3. Arrange sliced peaches on the pastry base.
  4. Whip the cream with icing sugar until stiff and spread over the peaches.
  5. Drizzle with raspberry coulis before serving.
