
Ingredients List
- 200g digestive biscuits
- 100g butter
- 500g cream cheese
- 200ml double cream
- 150g sugar
- 1 tsp vanilla extract
- 200g fresh raspberries
- 50g raspberry jam
Instructions
- Preheat oven to 160C (320F).
- Crush biscuits and mix with melted butter. Press into the base of a springform pan.
- Whisk together cream cheese, double cream, sugar, and vanilla extract. Pour onto the base.
- Bake for 40 minutes, then cool completely. Spread raspberry jam over the top and decorate with raspberries.
